This Shaak (curried beans) is simple, filling and quick to make. It involves minimal preparation and tastes delicious.
I've never really mixed curried beans with hummus before but it actually turned out to be really tasty! The grated carrots, cucumber and cherry tomatoes complimented it really well.
This recipe came about because I wanted something hot and although I wanted salad, I didn't want it as a side. I came up with chickpeas on a bed of salad and it was yummy! .

I didn't make this but I definitely enjoyed eating it! :)
This recipe serves 2.
• 2/3 of a tablespoon of olive oil
• 3/4 of a bunch of broccoli – torn into edible sized pieces
• 1 fresh chilli – finely chopped
• 2 handfuls of baby spinach leaves – left whole
• salt to taste
• pepper to taste
• 8 cherry tomatoes – left whole
• 130g of pasta – I use rigatoni
• 1/2 tablespoon of vegan margarine – I use Pure sunflower margarine
• 2 carrots – grated
• 1 small (200g) can of sweetcorn
• vegan sausage – thin circular slices – I use Taifun Tofu-Wiener
• 1 tablespoon of salt – for the pasta
1. Add the olive oil to a pan and heat it
2. When it’s hot, add the broccoli let it cook for 2 minutes before adding the chill
3. When the broccoli has become a little bit 'burnt', add the spinach, salt and pepper
4. After 2 minutes, add the cherry tomatoes
5. While this is cooking, boil some water and use it to boil the pasta in a separate pan
6. Add the salt to the pasta and stir
7. Check the pasta after 7 minutes and if it’s the way you like it, drain the water and add the pasta to the vegetables
8. Add the margarine to the pan (with the vegetables and pasta in it) and stir
9. To serve, create different sections on a plate, separating the carrots, sweetcorn and Wiener, and the pasta.
Suraj made this meal, which didn't take very long and it consisted of only a few ingredients. Although it was simple, it was delicious and satisfying! :)
This recipe serves 2.
• 2 handfuls of vegan spaghetti – about 120g
• 1 tablespoon of olive oil
• 1 teaspoon of chilli sauce
• pepper to taste
• 10 cherry tomatoes – left whole
• 2 handfuls of wild rocket
• 2 pieces (or more) of Taifun Basil Tofu
• 1 tablespoon of salt
1. Boil some water in a kettle and put it in a pan
2. Hold the spaghetti upright in the pan of water for 20 seconds, when it will begin to soften, allowing you to bend the spaghetti around the pan
3. Add the salt and stir, leaving it to cook on a medium heat for 10 minutes
4. When it's ready, drain the water and drizzle the olive oil over the spaghetti
5. Add the chilli sauce, stir and season with salt and pepper if needed
6. Put the spaghetti in a pan, add the cherry tomatoes and let it cook for a few minutes
7. Mix and serve in a plate or a bowl, with a large piece of Basil Tofu on top of the spaghetti
Garnish with Wild Rocket Add a piece of Basil Tofu Serve and enjoy!
It's quite hot in the UK at the moment. It isn't a complaint as I do like a warm/hot climate BUT I tend to want to eat raw foods and lighter dishes when it's not cold. So I've been having lots of salads and sandwiches too.
