Recipe: Quick, tasty and versatile kidney beans
This recipe can be used to create different dishes. It’s quick, easy to make and very tasty.
This recipe serves 2.
Ingredients for curried kidney beans
• 1 (240g) can of kidney beans or use dried kidney beans, which would need to be soaked beforehand, the water drained and then boiled in some fresh water
• 2 tomatoes - diced
• 1 fresh chilli – finely chopped
• 3/4 of a tablespoon of sunflower oil or olive oil (optional)
• 1/2 a teaspoon of mustard seeds
• 1 teaspoon of cumin seeds
• 1 pinch of asafetida
• 1/4 of a teaspoon of turmeric powder
• salt to taste
• 1 teaspoon of dried coriander powder
• 1 handful of freshly chopped coriander
How to make the kidney beans curry
1. If using oil, heat it in a pan and when it's hot, add the mustard seeds and cumin seeds, if not put the mustard seeds and cumin in the pan and heat the pan without adding any oil
2. Add the asafetida after 30 seconds and put the lid on the pan
3. After the seeds have popped, add the tomatoes and chilli and let it cook on a medium heat
4. After 2 or 3 minutes, add the kidney beans, turmeric powder, salt and dried coriander powder
5. After 5 minutes, add the coriander, stir and let it cook
6. This will be ready in 5 - 7 minutes
Variations
enjoy the kidney beans with brown rice
eat them with chapati or naan
create a layer of lettuce on a plate, scatter some cucumber on it, and cherry tomatoes and top it off with the chickpeas
warm some pitta bread, pull it apart to create some for the filling and then add lettuce, cucumber and the kidney beans
