Recipe: Tasty chickpeas on a bed of salad within 20 minutes
This recipe came about because I wanted something hot and although I wanted salad, I didn't want it as a side. I came up with chickpeas on a bed of salad and it was yummy! .
This recipe serves 2.
Ingredients for the tasty chickpeas
• 1 (240g) can of chickpeas or use dried chick peas which would need to be soaked for 12 hours, the water drained and then boiled in fresh water
• 2 tomatoes - diced
• 1 fresh chilli – finely chopped
• 3/4 of a tablespoon of sunflower oil or olive oil
• 1/2 a teaspoon of mustard seeds
• 1 teaspoon of cumin seeds
• 1 pinch of asafetida
• 1 pinch of turmeric powder
• salt to taste
• 1 teaspoon of dried coriander powder
• 1 handful of freshly chopped coriander
How to make the tasty chickpeas
1. Heat the oil in a pan and when it's hot, add the mustard seeds and cumin seeds
2. Add the asafetida after 30 seconds
3. After the seeds have popped add the tomatoes and chilli and let it cook on a medium heat
4. After 2 or 3 minutes, add the chickpeas, turmeric powder, salt and dried coriander powder
5. After 5 minutes, add the coriander, stir and let it cook
6. This will be ready in 5 - 7 minutes
Ingredients for the bed of salad
• 5 lettuce leaves - I use Iceberg – torn into small pieces
• 1/2 a cucumber – chopped into quarters
• cherry tomatoes – chop into halves whole
How to make the bed of salad
Create a layer of lettuce on a plate, scatter the cucumber on top of it, and cherry tomatoes followed by the chickpeas.
