Vagaareli Khichdi
I like a spiced up version of Khichdi and that’s the recipe that I’m going to describe below.
This recipe serves 2.
First of all, you’ll need to follow this to make the Khichdi and then spice it up using the following instructions.
Ingredients for vegan vagaareli Khichdi
half of the Khichdi
3/4 of a teaspoon of Rye
1/8 of a teaspoon of Jiru
1/8 of a teaspoon of Hing
2 cloves
3 Sweet Neem leaves
Fresh chillies to taste
Salt to taste
1/4 of a teaspoon of Turmeric
Lemon juice to taste
Fresh coriander to taste
How to make vegan vagaareli Khichdi
put a pan on the hob, turn the heat on and add the Rye and Jiru
after the seeds start popping, add the Hing and chillies
after 30 seconds add the cloves and Sweet Neem Leaves
add the Khichdi and give it a good mix
add the turmeric and mix again
taste it and add salt and lemon juice - I usually add a teaspoon of lemon juice
chop some coriander, wash it and add it to the Vagaareli Khichdi and mix it
After a further minute or so, it will be ready for you to enjoy
I like having the Khichdi on its own and I also like having it with this yoghurt.
