Recipe: Kale, Spinach and rocket Cannelloni
I wanted some comfort food which was full of greens, so I looked up a few recipes and then merged them to create this one.
This recipe serves 2.
Ingredients for vegan kale, spinach and rocket cannelloni
• 10 tubes of cannelloni
• 150g of kale
• 150g of baby spinach
• 75g of peppery rocket
• 400g of tofu
• salt to taste
• pepper to taste
• 1 - 2 teaspoons of unrefined brown sugar - if needed
• 2 cans of chopped tomatoes – 800g in total
• 2 tablespoons of nutritional yeast flakes
• 4 slices of vegan cheese - I use Pure dairy free cheese slices
How to make vegan kale, spinach and rocket cannelloni
1. Put the kettle on and while it’s boiling, put the cans of chopped tomatoes in a pan and cook until it's of a consistency that you like - I didn't want it to be very watery, so I cooked it on a high heat for about 15 minutes
2. While the tomatoes are cooking, put the kale in a pan, cover it with the water you just boiled and let it cook on a medium heat for 15 minutes
3. Now add the spinach and rocket to the kale
4. Add more water if needed and cook for a further 10 minutes
5. Drain any excess liquid into a glass in case you need to add it to the tomatoes later on
6. Put the leaves (spinach, kale and rocket) in a blender and blend it for 1 minute or 2
7. Break up the block of tofu and add it to the leaves and blend again
8. Add the nutritional yeast flakes, blend once more and then taste the mix
9. Add salt and pepper if needed
10. Get a baking dish that the cannelloni will fit in
11. Set the oven to 200 Celsius
12. Use a spoon or your hands to fill the tubes with the filling from the blender - I started off with a spoon, but later found it easier and quicker to I use my hands
13. Place the tubes that have been 'filled' into the baking dish
14. Put any remaining filling on top of the tubes
15. Taste the chopped tomatoes and add sugar, if needed
16. Pour the chopped tomatoes over the cannelloni
17. Put it in the oven for 20 minutes
18. Use the slices of cheese to create a top layer and cook for another 5 minutes
19. Use a spatula to put a portion of the cannelloni on a small plate and enjoy
Serving suggestions
Serve with a large portion of salad.
