The only Hummus recipe you'll ever need
My hubby loves hummus and he could pretty much eat it with anything! We tried making it a few times without success and resorted to buying it from then on. However, a few months ago, we made it for a large group of people and it went down a treat, so I thought I'd try it at home. It wasn't the same as the stuff in supermarkets but it was nice! I'd definitely make it again.
Ingredients for vegan hummus
- 1 tin of chickpeas or white kidney beans 400g
- 2 tablespoons of tahini
- 1 teaspoon of of salt
- 1 teaspoon of crushed black pepper
- 2 tablespoons of extra virgin olive oil
- 1 fresh lemon
- Ground Paprika
- Freshly chopped coriander
How to make vegan hummus
- Open tin of chickpeas/white kidney beans
- Drain the brine and set it aside
- Rinse the contents of the tin in cold water and put it into a blender, saving a few beans or chickpeas to garnish the hummus with
- Wash lemon, remove the seeds, squeeze the juice out, and add it into blender
- Put the salt, tahini and black pepper in the blender
- Blend it for 2 seconds and then add some of the brine or water
- Blend for a second, slowly pour in the oil, blend again and add more
- When the mixture is fully combined and smooth, tip it into a serving dish. Drizzle with a little bit of olive oil, add the extra chickpeas or beans on top and finally garnish it with paprika and finely chopped coriander
